    Default Popcorn Salad

    6 cups popped popcorn (a std. size bag)
    1/2 cup chopped green onion
    1 cup chopped celery
    1 cup salad dressing
    1 can water chestnuts, cut up

    Topping:
    3/4 cup crisp fried bacon (or 1 jar bacon bits)
    1 cup shredded cheddar cheese

    Combine popcorn, onion, celery, water chestnuts and salad dressing. Top with bacon and cheese. Best if used in 3 to 4 hours.

    Ma's Slaw

    1 red cabbage chopped
    1 green cabbage chopped
    2 carrots shredded
    1/2 cup mayonnaise
    1/4 cup seasoned rice vinegar
    2 Tbs Equal (has to be equal)

    Chop and shred veggies into large bowl. In smaller bowl combine the rest of the ingredients. Mix into cabbage, cover and refrigerate. Add more/less dressing if necessary. Remember you can always add more. You cant save it if its drowning!

    Cucumber Salad

    4 peeled sliced cucumbers
    1 cup heavy cream
    3 Tbs dried dill spice
    Salt

    Mix all ingredients. Salt to taste. Cover and refrigerate.

    Default Black Bean Salad

    Black Bean Salad

    2 15oz cans black beans, rinsed and drained
    1 cup cooked wild rice
    2 cups frozen corn, thawed
    2 cups cooked orzo
    1/2 cup diced red pepper
    1/2 cup chopped red onion
    3 fresh jalpenos, seeded and minced
    1/2 cup chopped fresh cilantro

    Vinaigrette:
    1/2 cup red wine vinegar
    1/2 cup olive oil
    2 Tbs lime juice
    1 tsp toasted ground cumin seed
    1 tsp salt

    1 mix all salad ingredients together. In a small bowl,whisk all vinaigrette ingredients together.
    2. Pour vinaigrette over salad ingredients and combine well. Let the mixture set at room temperature for 1 hour before serving.

    Raspberry Salmon Salad

    5oz wild caught sockeye salmon per serving
    1 bag of organic field greens or salad of your choice
    fresh raspberry's
    mushrooms, cucumber,tomato,plus anything you want to throw in to your salad.
    fresh cilantro
    organic raspberry vinaigrette salad dressing
    bleu cheese crumbles.


    grill your salmon while that is grilling put your salad makings on a plate place the rest of your vegetables along the outer part of your salad, place 3-4 raspberry's along the edge. When salmon is finished place it in the middle of the salad greens, put a couple to sprigs of cilantro on top of the salmon along with a few raspberry's. Sprinkle with bleu chess crumbles to taste then pour salad dressing over the entire plate to taste.

    Serve with a French bread.

    Fruit Salad with Honey-Yogurt Sauce
    Makes 6 servings

    1 cup vanilla low-fat yogurt
    1 Tbsp honey
    1 ? tsp grated lime ring
    3 cups cubed pineapple (about 1 medium)
    1 ? cups chopped Braeburn apple (about 1 large)
    1 cup chopped peeled kiwi (about 2 large)
    1 cup mandarin orange slices, drained
    1/3 cup flaked sweetened coconut
    1 medium banana, sliced
    ? cup slivered almonds, toasted

    Combine yogurt, honey, and lime rind in small bowl. Combine pineapple, apple, kiwi, oranges, and coconut in a large bowl; toss gently to combine. Just before serving, stir in banana. Top fruit mixture with yogurt sauce, sprinkle with almonds.

    Broccoli Raisin Salad

    1 large head of broccoli stems removed and cut into flowers
    1 cup salted and shelled sunflower seeds
    6 strips of bacon cooked crispy and then crumbled
    1/2 red onion diced into small bits
    1 cup raisins
    1 cup real mayonnaise (Best Foods)
    1/2 cup sugar
    1 tablespoons vinegar

    Put all ingredients in a large salad bowl. In a small bowl mix together mayo and sugar and vinegar and pour over salad. Refrigerate until incorporated at least 1 hour.

    Default Spicy-Crabby Pasta Salad

    1 lb. multi-colored rotini
    3 bell peppers (one each red, orange, and yellow), seeded and julienned
    1/2 cup brocolli florets
    1 cucumber, quartered and sliced
    1/2 red onion, diced
    3/4 cup grape tomatoes
    1/4 cup black olives, sliced
    2 packages fake crab, chunk or flake style

    Dressing:
    1 cup sour cream
    1/2 cup mayonnaise
    1/2 packet of ranch seasoning
    1/2 cup hot salsa
    1 teaspoon lime juice

    Start the pasta boiling; while it's cooking, chop the vegetables and set aside. Mix all ingredients for dressing together in a bowl and whisk; set aside. When pasta is cooked, drain and rinse with cold water, then add 6-8 ice cubes to the strainer and let sit for 5 minutes. Once the pasta has cooled, combine pasta, vegetables, crab, and dressing in large bowl and stir well to combine. Serve immediately.

    Spring Potluck Salad

    2 oz. bleu cheese
    ? pt. strawberries, sliced
    1 lettuce head, torn
    ? c. walnuts
    11-oz. can mandarin oranges, drained
    1 red onion, sliced
    ? lb. bacon, crisply cooked and crumbled
    balsamic or raspberry vinaigrette
    garnish: croutons

    Combine bleu cheese, strawberries, lettuce, walnuts, mandarin oranges, red onion and bacon; toss. Drizzle desired amount of vinaigrette over salad; toss to coat.

    Cranberry-Pecan Salad

    2 radicchio bunches, torn
    1 red leaf lettuce bunch, torn
    2 endive bunches, torn
    ? c. dried cranberries
    3 pears, thinly sliced
    ? c. pecans, chopped
    ? c. Gorgonzola cheese
    1/3 pear juice
    2 Tbsp vinegar
    4 Tbsp oil
    1 tsp red onion, minced
    2 Tbsp lemon juice

    In a large mixing bowl, combine radicchio, red leaf lettuce, and endive. Toss salad greens with cranberries, pears, pecans and cheese; set aside. Before serving, whish together pear juice, vinegar, oil, red onion and lemon juice; toss with salad and serve.

    Sweet and Tart Slaw
    Makes 6 servings.

    2 c. red cabbage, shredded
    2 c. green cabbage, shredded
    ? c. carrot, grated
    1 Granny Smith apple, sliced
    1 c. raisins
    1 c. mayonnaise-style salad dressing
    ? c. sugar
    1 Tbsp white vinegar

    Combine cabbage, carrot, apple and raisins in a large serving bowl; toss well. In a separate bowl, blend together remaining ingredients. Add desired amount of dressing to cabbage mixture; toss well to coat. Serve immediately.

    Cha Cha Chicken Salad

    1 8-oz. package cream cheese, softened
    1 c. mayonnaise
    2 tsp curry powder
    1 tsp salt
    6 c. chopped cooked chicken.
    1 can (8 oz) crushed pineapple
    2/3 c. orange-flavored sweetened dried cranberries
    1 c. chopped, roasted, salted almonds
    Garnishes: fresh herbs, blackberries, raspberries, sliced peaches

    Whisk together cream cheese and next three ingredients in a large bowl; stir in chicken, pineapple and cranberries just until blended. If desired, spoon mixture into a plastic wrap-lined 8-inch round cake pan; cover and chill at least 8 hours or up to 24 hours. Invert chicken salad onto a cake stand and remove plastic wrap. Gently press chopped almonds onto sides of chicken salad. Garnish, if desired.

    E's Chinese Chicken Salad

    Lettuce
    Sliced green onions (1 per person)
    Chopped water chestnuts (2 or 3 per person)
    Tangerine slices, preferably Pixie Tangerines (to taste, use canned mandarins if you must.)
    Packaged chowmein noodles or cold, cooked brown rice (1/2 cup per person)
    Grilled chopped or shredded chicken breast (1/2 per person)

    Oriental dressing (I prefer Girard's, but keep a packet of Good Seasons mix in the house for emergency needs)

    Put sufficient lettuce in bowls, then the onions and chestnuts, then the tangerine slices with noodles or rice on top.

    Add dressing.

    Sprinkle the chicken over the top. Best when hot chicken hits cool dressing.

    1# packaged spinach leaves
    2 hard-boiled eggs, sliced
    1 red onion, sliced thin
    Croutons

    Dressing:
    3 slices of bacon, diced and fried (save grease)
    In drippings, add:
    1/2 cup vinegar (less if you don't like it that sour)
    1/3 cup water
    3Tbsps sugar
    1 tsp salt
    1/8 tsp pepper
    Drop or two of Worcestershire sauce
    Bit of cornstarch to thicken

    Heat dressing til boiling. Pour over spinach with bacon bits. Add onions,
    sliced eggs, croutons.

    Easy All-American Slaw
    1lb bag of pre-shredded cabbage
    2/3c of honey mustard dressing (I like the reduced fat Newman's Own as it's slightly less sweet and slightly more spicy)
    1/4-1/2c of smoked almonds, coarsely chopped
    1 medium apple, diced

    Mix all ingredients together. Add pepper to taste.
    If you aren't going to eat all of this at once, I recommend only adding the dressing and then topping the slaw as it is consumed with the nuts (to prevent them from getting soggy) and the apples (to prevent them from getting brown).

    Rita's Taco Salad

    1.5 lb. ground beef (serloin)
    1 can pitted black olives
    1 can drained red kidney beans or black beans
    1 green pepper
    1 red onion
    2 tomatoes
    1 bag grated yellow cheddar cheese
    1 bag crushed Dorito chips
    1 bottle Russian dressing
    1 package Ortega Taco seasoning
    1 large head lettuce (or bagged)

    Cook ground beef, drain. Mix in taco seasoning following directions. Let cool completly. Dice and slice pepper, onion, tomato and add to this kidney beans and olives. (Can slice olives in half if needed) Wash and chop lettuce or if using bagged, wash and spin dry. Put lettuce in serving bowl, toss in cheese, chopped veggies and beans. Add the bottle of Russian dressing and toss. (Most people use the whole bottle, but you can adjust this to taste) Add chips and toss again.

    NOTE: Do NOT add the Russian dressing or chips until ready to serve or the lettuce and chips will get soggy!

    Oriental Broccoli Slaw
    (Note: start slaw the day before serving!)

    1 large bag of broccoli slaw
    1/3 Cup white vinegar
    1/2 Cup olive oil
    butter
    2 packages (8 oz, or one, 1-pound bag) slivered almonds
    2 packages (8 oz size) salted, roasted sunflower seeds
    1 package beef flavored Ramen noodles
    1/4-1/3 cup sugar

    In a small bowl mix the oil and vinegar, adding more or less to taste. Mix in the beef flavoring packet from the noodle package. (Store noodles in a ziplock baggie) Stir in about 1/4-1/3 cup of sugar. Put the slaw in another bowl then pour the oil/vinegar mixture over the slaw. Toss, cover with plastic wrap and place in 'fridge overnight. Stir occasionally to mix the slaw-oil mixture well.

    The next day (an hour or two before serving):

    Melt 3-4 Tbsp butter in a heavy frying pan. Add almonds and toast. This takes longer than you would think as you need to use low heat and stir often to keep the almonds from burning. Do not leave pan unattended or the almonds may burn and render them useless! Add more butter to pan as needed to keep from drying out. When almonds are almost golden, add a bit more butter and add the sunflower seeds to the pan. Toast both nuts and seeds a bit longer, then remove from heat and cool.

    Before serving:

    Stir slaw. Add seed and nut mixture to slaw and stir again. Just before placing the slaw on table, crush Ramen noodles in a plastic bag. (Don't over crush!) Add noodles to slaw and mix well.

    This slaw is so good that I usually double the recipe. When I take it to a party or picnic I assemble the recipe up to the point where you add the noodles. I bring the noodles in a plastic bag, then crush the noodles and add them just before serving.

    Mountain Dew Salad

    1 (6 oz) pkg. lemon jello
    1 c. boiling water
    1 can cold Mountain Dew
    1 (15 oz) pineapple tidbits, drained (save juice)
    1 pkg. instant lemon pudding
    1 c. cool whip
    1 c. mini marshmallows

    Dissolve jello in boiling water. Add mt. dew and juice from
    pineapple. Chill until starts to thicken. Make up pudding according
    to directions. Mix jello, pudding and cool whip. Beat together. Add
    drained pineapple and marshmallows. Chill.

    Default Corn Salad

    Corn Salad

    1 can (11-14 ounces) of corn or 4 to 6 ears of corn (I use one can of nibblers or niblets yellow and one can of white corn)
    1 tomato, diced
    1 cucumber, diced
    ? onion, diced
    Salt and pepper
    ? bell pepper, diced
    1 tablespoon vinegar
    1 tablespoon sour cream
    1 tablespoon mayonnaise

    Note: Instead of using vinegar, sour cream and mayonnaise, you may use 3 tablespoons Ranch dressing.

    Toss. Marinate overnight in refrigerator. The more nights marinated, the better.

    Cherry Congealed Salad

    ? cup water
    ? cup sugar
    1 can Red Tart Pie Cherries
    6 ounces Cherry Jell-O
    20 ounces crushed pineapple, including juice
    1 can Coke
    ? cup chopped nuts

    Boil the first 3 ingredients. Add Jell-O. Let cool. Add pineapple. Stir in Coke and nuts. Pour in casserole dish, and chill.
